“With the new collection I wanted, as always, to create designs that were elegant, simple and stunning, whilst incorporating different dimensions to the proportion of each design which I believe creates a more stimulating visual ‘display’. This year we’re introducing our almost double height tiers which stand at 8” tall and the half height tiers to complement our regular height tiers of 5”. I always strive to create cakes with a real ‘wow’ factor, but moreover I endeavour to create cakes that perfectly complement the couple’s theme, dress or style of wedding; bespoke cakes that are not necessarily shown in our repertoire. I have been a massive fan of the watercolour paints on cakes since they first came out and at long last have managed to bring the element into one of our cakes. We didn’t want to create a watercolour cake unless it made the impact we wanted. I loved the enchanted forest feel that Brides were starting to choose last year and can absolutely see this becoming a new trend, buttercream cakes and naked cakes are often really the only cakes that can suit this and wanted to offer something different for this type of wedding. Our edible sequins never fail to appeal to the Bride and groom and with metallic, lace and ruffles continuing in their popularity – I wanted to try and get this in one cake – but as always trying to provide something a little different to what is already out there. Inspired by the fabulous gold roof dome at Claridges which we saw just before Christmas, so quite a late addition to our initial designs; perfect for an elegant and classic wedding or Art Deco.
