Congratulations to Jennifer and James who married this weekend at Prestwold Hall, Leicestershire. Finally bringing together my sugar flowers to adorn the cake which matched their theme of orchids and peonies with flavours of Madagascan vanilla, fresh cherry with almond and fianlly lemon with elderflower. Filled with Swiss meringue buttercream and coated with rich Belgian chocolate gananche and covered with the best fondant; Swiss made Massa Ticino. Best wishes to them both!

This week’s wedding cake was at The Old Stables, Griffin Inn at Swithland, Leicestershire for Andy and Jag. The happy couple asked me to create an 8″ rich chocolate fudge cake with white chocolate and raspberry compote filled cupcakes and red velvet cupcakes. The gorgeous personalised cake topper was lovingly made by the bride’s sister and the cupcake decorations matched the embellishments on the bride’s outfit in bright gold, old gold and pearls.

This Swiss meringue buttercream covered cake survived the 30-degree unbearable heat this weekend! Unbelievable! Many congratulations to Natalie and Matt who married at the beautiful Carriage Hall, Plumtree, Nottinghamshire on Saturday in the glorious sunshine surrounded by their many family and friends. The cake included tiers of Cherry Almond, Lemon & Elderflower Drizzle and Chocolate Mud Cake with Salted Caramel.

I recently spent a couple of days making just five sugar orchids, which consisted of 30 different components.  Made from gum paste, each petal and centre is handmade and wired then left to dry overnight. Once dry they are dusted with colour to give depth and a sense of authenticity to the flower.  Each wire is wrapped with floral tape then the five petals and a centre are wrapped together to form the orchid.  Finally, they are steamed to set the dusted colour and to give a lovely sheen to the flower.  I can’t wait to see them on the cake along with the red peonies made previously.

Pretty as a picture, naked wedding cakes are still bang on trend so don’t worry if you’re ditching the icing and letting it all hang out.

We’ve seen these naked temptresses everywhere over the past few years but top cake makers are still finding imaginative ways to keep us head over heels about these wedding favourites. Go for variety with different flavours per tier so you can both have your favourites without falling out over it – and don’t forget to go bold with fillings such as lemon curd, cream cheese, candied fruits and homemade jams. Liven things up with unusual fresh fruits such as figs and passion fruit; delicate edible flowers are always a treat for the eyes; for the wow factor go all out for gold leaf and unusual flora and foliage never fails to amaze guests (check for the poisonous kind though –  if you’ve booked a pro cake maker he or she will know what not to use – if you haven’t then think twice!). And to stay bang on trend go for some delicious drizzle of whatever takes your fancy but remember, for all their glory and deliciousness these beauties can’t be displayed for too long. There’s no icing to protect the sponge from drying out and they might not do too well in a hot marquee environment so if you want to avoid the disappointment of serving your guests a dried up slice by the end of the evening please, please, please book a professional cake maker that is fully registered with Environmental Health (check cake business ratings on the FSA website here ), knows what they’re doing and understands from experience that creating a successful ‘wow’ wedding cake is way more than just baking and decorating.
